The “Nothing Wasted” Banana Bread

This weeks blog post is going to be short and sweet (literally). If you fancy making something quick, easy and simple then this recipe is definitely for you. After seeing Tesco’s recent advert, I thought I’d pick up a recipe card in store and give it a go.

You Will Need:  

125g unsalted butter, plus extra for greasing
100g caster sugar
175g self-raising flour
2 very ripe bananas (300g worth) peeled
2 eggs
100g sultanas
½ tsp vanilla extract
2 tbsp icing sugar
2lb loaf tin

Let’s Bake:

 Step One: Preheat the oven to gas 3, 170°C, fan 150°C and lightly grease a 2lb loaf tin with butter.

Step Two: Melt the butter and sugar together in a small saucepan over a low heat and stir continuously until all the sugar has dissolved.

Step Three: Pour the mixture into a large bowl and leave to cool for 5 minutes.

Step Four: Sift the flour into another large bowl and add a pinch of salt.

Step Five: On a small plate, use a fork to mash the bananas well.

Step Six: Beat the eggs into the butter mixture, and then add in the mashed bananas.  Stir in the vanilla extract and the sultanas.

Step Seven: Fold in the flour gradually, stirring well.

Step Eight: Pour the mixture into the loaf tin and bake in the oven for 45 minutes or until a knife comes out clean. Tip: If the loaf starts to brown you can cover with tin foil

Step Nine: Leave the loaf to cool before transferring to a wire rack, and then leave to cool completely.

Step Ten: Mix the icing sugar with 2 tsp of water to make a runny icing and drizzle over the top of the loaf. To finish decorate with chewy bananas chips. ENJOY!!!
